This stone sits comfortably in Andréa’s top three favourite sharpening stones.
The Naniwa Professional (Chosera) P-330 #3000 is widely regarded as a standout finishing stone for serious sharpeners. If limited to a single whetstone for long-term use, this would be the easy choice for many professionals. It cuts quickly for its grit, offers excellent feedback, and produces an edge that is both extremely sharp and cleanly refined. Its balance of speed and polish has made it a long-term go-to stone in professional and home kitchens alike.
